I've already planned a trip to Whole Foods in Tampa. I want to get some GF pasta for my pasta salad, lasagna noodles, some GF brownie mix, and possibly some GF pizza dough.
I'm in a tizzy about what to cook. I can make the pasta salad and the brownies the day before. The toppings for the pizza can be made the day before, and it will only take about 20 25 minutes to finish it off. I'm not so sure about making the lasagna the day before, just think the noodles may get too soft. But do I do wings, or ribs? Those aren't real time consuming, but I'd rather spend my tome BS'ing with you guys than in the kitchen.
I'll figure it out in the coming months. Heck, maybe I'll post on the Meet Up thread and see what everybody likes.
Rest assured, Teebs, lasagna, if the sauce is done correctly, will be absolutely fine prepared early, and simply heated for serving when needed. The secret is just don't give the noodles and cheese a bath in sauce, it is just supposed to be enough to flavor and cook the noodles in the sauce, most of the moisture content will wind up in the dish, not just sitting there waiting to ruin it if it sits around in the fridge.
As for an opinion about the wings or ribs...the wings are a little more forgiving as far as everyone getting to select the amount of fire they desire by whatever condiments you line up to dress them with. Cook them for the masses, supply plenty of "personalization" alternatives....you won't be able to cook enough! Hahahaha!
Sounds like a great time with good food. A thoughtful host always makes the difference, so you have nothing to worry about!
I tried a frozen gf pizza I've never tried before. I don't mean that I ate it frozen. '-)
It was pretty darned good. I'll have it again.
