Here’s an apple pie with a soothing, custardy twist, sweetened with healthy maple syrup and bursting with apple flavor and nutrition. This pie looks just a bit like a full moon, a reminder of autumn night-time magic on your table.

This tender, fragrant delight is loaded with omega-3 and calcium, and it’s easy as pie to make!

INGREDIENTS

1 pie crust of your choice
2 cups firm, tart apples, peeled, cored, and sliced
1/3 cup raisins (optional)
4 large eggs
3/4 cup maple syrup or honey
1 cup plain lowfat or non-fat yogurt
1 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt

1. Preheat oven to 375F.

2. Spread apples and raisins evenly in unbaked pie shell.

3. In a blender, combine the eggs, maple syrup or honey, yogurt, vanilla extract, cinnamon, and salt, and blend until creamy.

4. Pour this custard over the apples and bake for about 1 hour, or until set. Allow to cool before serving.

Serves 6 to 8.

I just made this pie, just took it out of the oven. I can't wait to taste it once it cools off!
Okay! I'll be waiting for my slice. LOL
It's so good! We ate up half of it by last night! I had to laugh at how we kept going back for another piece! It''ll be another family favorite.
