I work at a wellness center where people go to detox and cleanse; One of the center's claim to fame is their raw food menu. I have tasted a few dishes and love them!!! I am trying now to incorporate more raw food dishes into my life and eat raw at least two times a week. Although the center has lots of recipes, I always welcome new ones...Anyone has any?

I was hoping you would have listed a few of the other than the usual veggies like carrots, celery and the like
I can list some if you like...for example, I've just tried a soft taco dish that is delicious!
What you need is:
Any big leafed vegetable like Chard, it will be your "tortilla"
Then you soak a cup and 1/2 of walnuts (soaking nuts is better for your digestion) for about 1 hour in cool water, 1/2 hour in warm water. Then drain.
To the nuts add 2 tablespoons of tamari, 1tsp. of coriander and 1tsp of cumin. Blend in a food processor until it has the consistency of a grainy loose paste.
Spoon then the mixture in the "tortillas" You will be amazed how much the mixture will taste like beans.
Then pile on top, homemade salsa (raw) like Pico de galo. Any kind of sprouts and sliced avocado.
Thats it...roll it and eat it and I know you will love it! :)
