Hearty One Pan Breakfast
INGREDIENTS
3 potatoes, peeled
6 ounces bacon, chopped
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 teaspoon chopped garlic
1 cup chopped fresh tomatoes
salt and pepper to taste
6 ounces Cheddar cheese, shredded
8 eggs
..DIRECTIONS
1.Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
2.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add the onions, peppers, garlic, tomatoes, and potatoes. Season with salt and pepper and cook until vegetables are soft, about 5 minutes.
3.Sprinkle vegetable mixture with cheese. Crack eggs into the pan a couple of inches apart. Cover pan and allow eggs to cook to desired firmness. Remove pan from heat and serve. Serves 8.
I was over in Aberdeen, Scotland a few weeks ago and had some great breakfasts consisting of egg, bacon (British style), baked beans (Heinz), stewed tomatoes, sausage & black pudding with toast and marmalade on the side. Brought back fond memories!
I'd like to go to Scotland sometime. I go to a chat site and there are people from England, Australia and Scotland at the site...sometimes we get to talking about foods from our countries and Scottish dishes sound so good.
Yes I used to visit the Daily Grind Cafe at the old TBD that had people from all over contributing, which made it interesting. A number of those have migrated to .ning DG but the chat format isn't quite as handy I find.

I just saw this recipe and it looks good!
Sunrise Sausage Bake
Ingredients:
•2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
•8 large eggs, beaten
•1 lb. precooked sausage links, cut into ¼-inch slices
•2 cups (8-oz. pkg.) shredded cheddar cheese
•1 cup chopped red and/or green bell pepper
•2 green onions (green parts only), sliced
•1/2 teaspoon onion powder
•1/4 teaspoon garlic powder
•8 cups 1/2-inch cubed Italian or French bread (about 9 slices)
Directions:
PREHEAT oven to 350º F. Grease 13 x 9-inch baking dish.
COMBINE milk, eggs, sausage, cheese, red pepper, green onions, onion powder and garlic powder in large bowl. Add bread cubes, stirring gently to moisten bread. Pour mixture into baking dish.
BAKE for 45 minutes or until set. Serve warm.
TIPS:
• This bake can be assembled ahead of time and refrigerated. Let stand at room temperature for 30 minutes before baking.
• Substitute multi-grain bread for Italian or French bread.
One thing I thinkI would change....I would use bulk sausage instead of the links...you would have a bit more meat...and there are several varieties to go with....
