Vidalia Onions?

.... hey, it's a really slow night, & I can post purt'near anything I want. (I learned this from Jaylee). So... PA noticed that I haven't had Vidalia Onions in a couple days, so I figured there might be one or 2 people who'd be interested in learning a thing or 3 about these sweet, delicious onions. I have enjoyed them so much this summer, more than ever before for some reason. I've eaten them just about every night (as PA has noticed '-)

So, here's a little intel on them, and feel free to use this thread to ask anything you'd like to know about, or post anything you'd like to enlighten us about.

Thanks d's girl, for a trip down memory lane. I lived down the road (interstate) from Vidalia for a number of years. Finally got brave enough to bake a few of those sweeties with bouillon and butter, and it was pretty yummy!
Glad I gave you that memory, real. I love 'em simply sauteed w/a little butter. They are sooooo good!

(btw.... I live in Georgia, but don't actually know where Vidalia is! ;-p I'm going to Google it right now! ...)

OK, I like onions too. I usually either buy Vidalia, or red onions, or occasionally sweet yellow ones. Anyway, D'sG, you made me google recipes and I think I might have to try this one.

Vidalia Onion Casserole

3 cups coarsely chopped Vidalia onions
2 teaspoons butter
2 teaspoons all-purpose flour
1 cup chicken broth
1 (5 1/2 ounce) can evaporated milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup grated cheese (such as Swiss)
1 cup cracker crumbs
Butter (to dot on top of casserole)

Boil onion chunks for 15 to 20 minutes; drain and rinse.

Melt butter in a saucepan. Stir in flour, broth and milk, stirring constantly until thickened. Add onions, salt and pepper. Place onion mixture in a 1 1/2-quart casserole dish, top with cheese and cracker crumbs, then dot with butter. Bake at 375 degrees F for 30 minutes.

I would like to know why some onions make me cry and some don't. Do they put off unscented fumes?
