Bagel & Lox without the Lox (LOL) - and with 1/2 a Grapefruit

1 T low-fat cream cheese
1/2 bagel, toasted or not, your choice
1/2 tomato, sliced or diced
1/2 pickle, sliced or diced (clausen dills are good)
2 onion slices, sliced or diced, preferably Spanish onion

1) spread cream cheese over bagel half.
2) add tomato slices, pickle and onion on top. It should be piled high. If you choose to use a whole bagel you can make a sandwich.
3) serve with 1/2 grapefruit.

Hey Pru, don't you have one of those chop-o-matics hidden somewhere. LOL
No really, while the bagel is in the toaster I chop all the veggies at once then spread on the cream cheese and pile on the veggies. I thought this would taste weird with the pickles in the morning, but it is actually quite good.

That looks really yummy. I bet it was messy though. Never thought to use garlic salt, but I can't eat too much salt - it will make my feet swell.

So are we going to get fansy here and add pics to all of our recipes? I guess I can give it a try next time.
Does anyone else juice? I have a juicer and make fresh juice almost everyday. It is a great pick me up not just for bkfst, but for a quick snack in the middle of the day. This morning I juiced 3 carrots and 2 celery sticks and yesterday a whole grapefruit. I keep the pulp from the carrots to make carrot cake. Yummy!
