OMG the oven!!! You evil woman. . . How can you ruin meat like that? (just kidding) I thought about the oven when I first started but decided true jerky is dried not cooked. Even though the temp is low I choose not to use it. I won’t use a dehydrator either for the same reason. I’ll explain later what I do use.


Ingredients
About 2-3 pounds red meat

Brine:
3/4 cup Worcestershire sauce
3/4 cup soy sauce
2 teaspoons ground black pepper
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon liquid smoke
1 to 2 teaspoon red pepper flakes depending on taste
1 tablespoon honey

Directions
Freeze meat for 1 hour, so that it will be easier to cut.
Slice the meat with the grain as thin as possible.
Mix brine ingredients in a Ziploc.
Put the meat strips in the brine, seal bag removing all air and squeeze meat and brine around so everything is well covered.
Lay bag flat in the refrigerate for 3 to 4 hours. Any longer can make it salty.
Remove meat from the brine and drain on cooling racks.
When the meat is dry place it evenly in groves of new filters. Bungee filters to fan, you will need one extra filter to cover meat on all sides. Set fan to medium for 8-12 hours depending on taste. Blow air towards filters not into fan.
