Shrimp...boiled shrimp and wine....going to sit in my jammies and watch the Cotton Bowl and stuff myself with shrimp.
and maybe a little organic dark chocolate.

We had Tom Kha w/shrimp & mushrooms & scallions that was really good!
And not Pad Thai, Stir, but chicken & green beans in a Thai peanut sauce on Thai noodles. Almost Pad Thai.
And red wine.
Very, very, very nice.
I'm enjoying a wonderful date night in.
I'm having Rosted Chicken & Bowtie Pasta, with a Vegetable Medley. All prepasared by my favorite chefs at Stouffer's. Watching the Cotton Bowl. Rooting for Kansas State.

These little Thai wraps that I kinda made up. Take some roasted chicken from the deli, shred it, warm it up in a pan with some garlic salt and tuck that into a steamed tortilla with some stir-fried broccoli salad, some slivered red onion and a splash of Thai Peanut Sauce - I use the "Bangkok Padang" stuff from any of several local grocers. Zap all of that under a steamer cover for about 30 seconds or so, and they're pretty tasty....
Okay, I wanna elaborate on our meal tonight.
I love Thai. I was glutened terribly after my Celiac diagnosis in a fabulous Thai restaurant that responded so arrogantly & indignantly to my queries about them being able to provide a gluten free meal for me. I was very ill for about 5 weeks. That was over 3 years ago. I haven't been able to bring myself to try another Thai restaurant since. Thai is my favorite cuisine, so I've missed it terribly. So tonight I used some prepared foods, which I usually don't do, and it turned out quite good. Yay! "Thai Kitchen" has a canned (yes, canned!) Tom Kha. They call it "Coconut Ginger Soup". I added a little Coconut Milk & a little chicken broth & brought it to a simmer. Then, minutes before serving I added sliced white mushrooms, fresh shrimp & chopped scallions. It was good! Seriously. I'll have it again. And again. And I also made chicken & green beans & onions in Peanut Sauce using the "A Taste of Thai" kit & Mary Chung's Thai noodles.
It was a passable Thai dinner. I quite enjoyed it. '-)
