THESE ARE A NICE CHANGE AND GOOD FOR YOU TOO!
2 cups old fashioned oats
1/3 cup dark brown sugar, packed
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup blueberries, fresh or frozen don't thaw
1/2 cup raspberries, fresh or frozen don't thaw
1/2 cup semisweet chocolate chips
1/4 cup creamy peanut butter
3 Tbsp unsalted butter, melted
2 cups milk
1 tsp vanilla extract
preheat oven to 375F. spray a 9 x 13 inch pan with vegetable spray.
in a large bowl, mix together oats, brown sugar, baking powder, cinnamon, nutmeg and salt. stir in blueberries, raspberries and chocolate chips.
in a medium bowl, stir together peanut butter and melted butter, then whisk in milk, egg and vanilla. pour into the oatmeal mixture and stir to combine well.
transfer to prepared pan, spreading mixture to the edges. bake until lightly brown on top, about 30 to 40 minutes. serve warm.
great with yogurt too!
