I discovered I'm blackberry-rich when my husband mowed the pasture this year. I've collected 3 gallons and have about 10 gallons more to still ripen.

The question is, what else can I do with them besides blackberry jam and blackberry cobbler? These are the recipes I've found so far, but I want more!

Can you freeze them for winter? I've also made fried pies and mixed berry jam and pies, using raspberries, strawberries and/or blueberries. There's a pie called Bumble Berry Pie that uses a mixture of fruits like apples, rhubarb and berries that you might be able to tweak for blackberries. Hope you can get them all done up!
Yes you can freeze them. Ours are just now coming in. Beware of the chigger!
I managed to dodge the chiggers, only to find myself covered in poison ivy! ARGH!!

Sorry to have posted then ran, but the day after I posted this was when I broke out, and I've spent most of my waking hours soaking in oatmeal baths. Now it's drying up, good thing too, there are still hundreds of berries to pick! lol
This one is from Cooks.com and you could adjust for your berry quantities:

BLACKBERRY SYRUP

3 c. fresh blackberries
3/4 c. sugar
1 1/2 tsp. grated lemon peel
1/3 c. water

1. In heavy 3 quart saucepan, combine blackberries, sugar, lemon peel and water. Mix gently. Cook over medium heat, stirring constantly, until sugar dissolved.
2. Bring to boiling over medium high heat. Reduce heat. Simmer, uncovered, for 8 minutes, stirring occasionally, until fruit is soft.

3. While cooking 2 to 3 more minutes gently mash fruit against pan with wooden spoon.

4. Cool to lukewarm. If desired, strain fruit mixture by pressing through a sieve. Pour into a storage container.

5. Cover and refrigerate up to 2 weeks.

Yields 2 cups syrup with pulp, or 1 cup strained syrup.
Blackberry cobbler with homemade vanilla ice cream is the finest dessert on the planet. Given the choice between it and a night with a super model (and I REALLY like super models, I would have to think about for awhile.
Since I made some gelato, I have blackberry cobbler with blackberry ice cream! Bwuah hahaha
"This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka."

READY IN 1 Day 5 Min
Original recipe yield 1 quart

INGREDIENTS
1 cup sugar
1 quart blackberries
1 quart vodka

DIRECTIONS
1.Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
2.Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.
Sweet Blackberry and Brandy Sauce

"This is a really easy sauce to serve over ice cream, cheesecake, or perhaps even pancakes. Serve it warm over vanilla ice cream or chill it, and serve over plain cheesecake."

.INGREDIENTS
4 cups fresh blackberries
1 cup sugar
1 tablespoon brandy
2 tablespoons cornstarch
1/4 cup water

DIRECTIONS
1.Place the blackberries, sugar, and brandy into a saucepan, and place over medium heat. Slowly bring to a simmer, and cook until the blackberries have softened, about 10 minutes. Dissolve the cornstarch in the water, and stir into the simmering berries. Continue cooking and stirring until the sauce has thickened and reached your desired consistency, about 10 minutes.
JaW, I bet you could even can these recipes (at least the 2nd one) if you wanted to make more than one batch.
I'm sure I could, thanks. I've canned jam, frozen gelato, and frozen cobblers (I like them ready to thaw, heat, and eat!) these are some great ideas!

I've done up 5 gallons (before the ivy fiasco), and still have berries blooming all along the fence row. (we have 10 acres)

I've also discovered a few persimmon trees, so that'll be next... ;-)
