I made pasta fagoli tonight, mmmmm! it is kinda spicy, but i love the red and white kidney beans, tomatoes and shell pasta in it. Sourdough toast for dippin' too!!

Here's my makey-uppy Mexican Chicken & Rice casserole. It's quick & easy.
Ingredients
1 1/2 - 2lbs boneless chicken
1/2 lb. of rice, cooked per instructions (actually, as a general rule w/cooking rice, use less water than the instructions say by about 25%)
1 can Progresso Chicken & Cheese Enchilada soup
1 small can green chiles, diced
grated cheese
1/2 can pitted black olives, chopped
Preheat oven to about 350º. Pan sear the chicken for 5 minutes on each side, then reduce heat to low-med.low, cover & cook another 5+ minutes for thighs, 10+ minutes for breasts. Remove to cutting board & cut in big bite-sized pieces.
Grease a casserole dish & mix everything into it, except the grated cheese - top w/that & bake, uncovered for about 15 minutes, or until cheese is melted.
