What can we have in this summer heat that's satisfying, without heating up the kitchen & ourselves?

Well, those Yuppie items look awfully good, I must say.
Yes, they do!
Since we go out every night we don't generally worry about the heat except for the ten foot walk to the garage before we leave. If we did cook we have excellent AC.

I only have window units, we don't use air that much [usually] in this area. They do a pretty good job, but turning the oven up to to 350 isn't such a good idea.

 

I eat a lot of salad in the heat...buy some already cooked chicken at the gorcer, mix it up with the greens and a little ceaser or ranch dressing.

Ceese and crackers with apple.

Posciutto wrapped melon...

Peanut butter and jelly sammiches....followed by strawberries and whipped cream

My kind of cook.

It's 101 degrees outside.

I just had ice cream. Tin Roof on a waffle cone.

That might've been dinner. Not sure yet.

Good choice I would think.

I love gazpacho in the summer.

A few other ideas as I read through the thread...

steamed shrimp (the grocer will steam them for you) w/cocktail sauce

Caprese Salad (I call it Mozzarella Insalada)

Egg Salad sandwiches - mmm!!

melon as a side w/just about anything

sliced tomatoes as a side w/just about anything

Hearty salad w/chicken, mixed greens, walnuts, bleu cheese, a tiny bit of finely chopped onion & dried cherries or cranberries

Sherbet or Edy's frozen fruit bars for dessert
