What are some of you favorite produce recipes and do you eat them with meat or without?

The picture I attached to this group is of a dish enjoyed at my DIL's one afternoon. It is very simple. Chopped cabbage and fresh frozen baby peas covered in a bit of Vegenaise and a squeeze of lime. You could add onion, carrot, celery and any other vegetable but we had it just simply cabbage and peas. It was very good fresh but the next day the peas didn't taste so great. I am not a pea lover so that may have had a lot to do with it.
