First of all, it has to be aged and very, very sharp. That being a given, provolone is high on the list, but cheddar is better. Runnerups include Swiss and Roquefort.

I like mild cheddar and pepper jack.
I love Muenster cheese but I've also been enjoying mozzarella or Caribe Queso on my homemade pizzas. The queso has to be Caribe...other brands don't cut it for me.
