Thanks Julia, my daughter does not like raisins the cranberries are a perfect substitution. I will make these soon.

Oatmeal Cranberry Cookies

Ingredients
1 cup dried cranberries hot water, enough to cover the cranberries 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon kosher salt, or sea salt 3 cups old-fashioned oats 1 cup unsalted butter, at room temperature 1 1/2 cups packed brown sugar 2 large eggs 1 teaspoon pure vanilla extract
GET INGREDIENTS

How to Make It
Step 1
Soak the cranberries in the hot water for at least 15 minutes. Set aside.

Step 2
In a bowl, whisk together the flour, baking powder, and salt. Stir in the oats. Set aside.

Step 3
In a mixer, beat together the butter and brown sugar until well combined, about 1 minute. Beat in the eggs and vanilla. Stir in the flour mixture until just combined. Drain the cranberries and stir them into the batter. Chill the dough for at least 1 hour or up to overnight (the dough can also be pre-scooped and frozen for future use).

Step 4
Preheat the oven to 375°F. Line a couple sheet pans with parchment paper. Scoop the heaping tablespoon sized portions of the dough onto the lined sheet pans, spacing them about 1 1/2-inches apart.

Step 5
Bake for 12-14 minutes or until the cookies are lightly browned. Let them cool for a few minutes and then transfer to a wire rack to finish cooling.

Been raining here in the woods of Washington State all week. Got a roof over our heads, house is warm and bellies full. Who could ask for anything more other than Oatmeal Cranberry Cookies

The rain finally stopped for a few days. Thank goodness. My dog has cabin fever and keeps bringing me different toys to play with. I have played tug of war and throw the ball down the hall over and over. Maybe he can run in the yard soon.

Absolutely is chili weather. My part of Texas is wet,wet, wet. The river are lapping at the bottom of bridges and next week we will have freezing temps. three night in a row.

cold + wet= chili weather

Official Chili Recipe from TBD. Prunella Farquar's Texas Chili
2 lbs lean beef, chunked
1 lb pork, chunked
1/2 tsp ground cumin seed
2 onions chopped
7 cloves of garlic
4-6 Tabs bacon fat
2 cups mighty fine beef stock
1 cup chopped canned tomatoes
6 -10 Tabs of chili powder (However hot you like it)
2 Tabs flour
1 bay leaf
1 tsp dried basil
In heavy chili pot, brown the meat, onions and garlic in hot bacon fat. Add boiling beef stock and tomatoes and bring again to a boil. Cover and simmer very gently for about an hour. Blend chili powder and flour in a little hot liquid from the pot and then add this back to the pot along with the remaining seasonings. Continue gentle simmering until the meat is tender and the chili thickened.
You may want to keep your beer ice cold and have it handy.

Just to let you know....I will not be posting for the next week or so. Gotta cook up cakes, soup and food to have ready to heat up. I know I will want to rest up so I am gonna have things ready to go with minimal effort.

I make a "black bottom" cupcake which was one of my family's favorites. It's a deep chocolate batter which has a dollop of a cheesecake-like mixture plopped in the middle. The lighter cake bakes up around the denser cheesecake stuff. No frosting needed. Pretty darn good.
