Hi everybody.
Does anybody happen to have a good recipe for stuffed peppers?
I had my mother's recipe somewhere and can't seem to find it.
I am so organized. LOL

This is my favorite. It's quick and easy.
I parboil, some Poblano, Anaheim or Bell peppers, whatever looks the best, or depending on my mood.
Clean the seeds out and stuff them with Boudain. I cut the casing off and just fill them. Sprinkle with bread crumbs and top with a pat of butter. Stick them in the oven for a few minutes, it doesn't take long, the Boudain is already cooked and the peppers are mostly cooked. Dang! now you have me wanting some.
Hummm just thought about where you live.
Boudin might not be easy to find there.
I don't even know what Boudin is. LOL
It's a type of sausage from the South, specifically Louisiana.

I get mine locally, but have ordered from this company.
Hi Carmen....I just started "Ground Beef" discussion and added a Stuffed Green Pepper recipe I use....its good.
