Yes, Wayne, it's used as a filler and to absorb some of the fat. Lots of things can be used besides bread. I have used oatmeal and rice, for two. Cracker crumbs work too. I like to put in onions and sage and seasoned salt. I have put cheese in the middle, too. And I've used chopped stuffed olives. You can get pretty creative with meatloaf. I don't do the ketchup thing; I much prefer mine with a mushroom gravy.
Sounds good to me . Mom also used Oatmeal . Never thought about using rice , like the thought of that . I have made a few and put lots of green peppers oatmeal and used thick spaghetti sauce with a few eggs in mine .
Oh, yes, always the egg, to help bind it all together. Peppers and pasta sauce sound good. It's all a matter of preference. I do whatever sounds good at the time.
my ma used to use rice and made it into baseball size balls,get this..she called them porcupine balls.
OOOh! OOOOH! I make porcupine meat balls! They have been a family favorite for 40 years! My mom didn't make them; I can't remember where I learned to make them. They are still a big hit in the family. Mine are smothered in mushroom gravy, but you can do other things with them. My grandson-in-law loves them, and so do my two son-in-laws. And when my dil was in Thailand, my son asked me to make them for him.
Mine are more like tennis balls, though.

I make sandwiches out of them with ketchup the day after. Great leftovers (if I'm lucky enough to have any!)
i've never made meatloaf the same way twice... have used the onion/mushroom soup mix, seasoned bread crumbs, worchestershire sauce, v-8 juice, egg, milk, chopped onion, ground turkey instead of beef... not really sure you can make it wrong....
Mine is close to yours Lucinda I have not tried the v-8 juice with it, I used to always use low fat beef 92% beef 8% fat, now I also use turkey, Sometimes I put a few slices of bacon on top with marinara sauce. I usually use some green pepper and sometimes mushrooms.
White bread makes meatloaf taste so good! Meatballs too. White bread is like the secret ingredient. I also make it all different ways. An easy way it to use Stove top or any one step stuffing mix instead of bread crumbs. It gives a completely different flavor. I love it with stewed tomatoes in it and on top of it, but my husband doesn't. Sometimes I'll make small ones so I can have the stewed tomato kind and he can have his kind.
So, chopped meat, a couple of slices white bread soaked in milk, an egg, slat and pepper or Adobo which is salt, pepper, garlic powder, oregano all together in one handy container, seasoned bread crumbs or stuffing mix, sometimes a little worchestershire sauce or ketchup in it, then ketchup on top, then throw it in the oven.
Funny this came up as I'm planning on making meatloaf today.....I also make it many different ways. The only red meat I eat is grass fed......I'll be using a package of dry onion soup mix, worchestershire sauce, cut up onion (I love onion), 2 beaten eggs, and a garlic marinara on top.
I love to make sandwiches from the leftovers.
