Uh,  Quinn,  per your request, included hereunder is the recipe I used for the fried green maters.  I wonder if anybody else will use it?  (heh, heh, heh, that last sentence was included to make this post into a question)

 

Cut the 'maters into 1/2 inch slices.  Season with pepper and season salt.

 

Preheat frying pan with EVOO, to medium heat.

 

Put a small amount of milk, white flour, beaten egg and corn meal in individual bowls. 

 

Dunk each 'mater slice in the milk, then dredge in the flour, dip in the egg and dredge in the corn meal.

 

Put in the preheated frying pan,  cook for about four minutes per side, but not until they turn mushy.

 

Serve with some chicken thighs cooked the same way, but note they may need a bit more cooking time.

 

You may want to "kick it up a notch" with some cayenne pepper or hot sauce.

 

Day-yem, but those were good!

Yep, you sure could Bob, although it takes a while to coat each bean with the four part mixture.
