Right now take-out Chinese sounds good. Except my favorite place doesn't deliver and I don't want to go out. In the heat. And the rain. And the Tornado warning.
I'm thinking of eggplant marinara for lunch, with a little pasta/avocado/red pepper salad. After that big late lunch yesterday, I didn't get hungry until about ten, so I ate a couple of Wasa crackers with cheese and some fruit, and pushed the omelet up to tonight.

Chicken chunks sauteed in olive oil and chili powder, then lightly poached. Drenched in a honey-lime-cilantro dressing. Tossed into a salad of dark greens, fresh corn, red onion slices and jicama slivers. Maybe some black beans.
Guacamole mandatory, on salad or in chips.
Gotta go; mouth watering.
I don't know where we will go tonight. Sunday has for a long time been Ming Court night but Caleb has gotten tired of it. we must agree on a substitute.
